I am not sure about other places but here in Australia Bubble Tea is huge. What is bubble tea you may ask? Bubble Tea is basically an ice tea originally from Taiwan that contains tapioca pearls. Inspired by this drink I have created my Pickled Eyeball Martini which is basically a fruity Green Apple Martini containing tapioca pearls.

 What you will need…

1 part Green apple Vodka

3 Parts Dry Vermouth  

1 Part Apple Schnapps

Dash Melon Liqueur (Peach Schnapps tastes nice as well)

Simple syrup

Tapioca Pearls

What to do…

Cook the Tapicoa. This >video< will let you know how to do so.

Once cooled and cooled soak the pearls in the simple syrup for about an hour.

In a shaker with ice combine the vodka, vermouth, schnapps and liqueur. Shake well and strain into a glass.

Add the Pearls and serve.
